Simon is the daughter of well-known chef Florian Simon. She helped her father out in his several restaurants before becoming his sous-chef upon the opening of the highly-acclaimed Alchimie restaurant in Roodstad in 2003.
She took over Alchimie from her father in 2006, and quickly won many accolades as she transformed the restaurant into one of Brunant's best. In 2012, the restaurant was awarded a Michelin star, and later was awarded the Best Restaurant award by Monde Culinaire multiple times. In 2017, Alchimie won its second Michelin star.
